During a visit with Dawn Dunavant-Banks, chocolatier and owner Jessica Washburn shared the inspiring story behind The Bliss Chocolatier and how a love for chocolate became a thriving artisan business in Blue Springs.
Starting a Business During the Pandemic
Opening a business is never easy, but Jessica chose a particularly challenging time to begin her journey.
The Bliss Chocolatier opened in December 2020, during the height of the pandemic.
“It was a little scary to start a business then,” Jessica admitted.
But the Blue Springs community quickly embraced the new chocolate shop. Customers shared their excitement with friends, and word spread quickly.
Just days after opening, customers were walking through the door saying, “My friend told me I had to come in and try this.”
That community support helped The Bliss Chocolatier grow and gave Jessica the encouragement to continue pursuing her dream.
Handmade Chocolate Crafted With Real Ingredients
Unlike mass-produced candy, every chocolate creation at The Bliss Chocolatier is made by hand in-house.
Jessica creates most of the chocolates herself, carefully crafting each piece using fresh, high-quality ingredients.
If a chocolate features a fruit flavor, it includes real fruit. If it includes nuts, Jessica uses real nuts. Every ingredient is chosen intentionally to create a rich, authentic flavor experience.
The result is artisan chocolate that is as beautiful as it is delicious.
Creating Chocolate With Layers of Flavor
One of the things that makes The Bliss Chocolatier unique is the complexity behind each creation.
Jessica’s chocolates often include multiple layers of flavor, combining different textures and ingredients into one unforgettable bite.
Her popular lemon chocolate, for example, features three layers of filling:
- Vanilla bean marshmallow
- Lemon caramel
- Lemon ganache
Other customer favorites, including the s’mores and cheesecake bonbons, also feature multiple layers.
While creating these intricate chocolates requires extra work, Jessica says customers love them so much that some flavors have become permanent favorites.
From Home Experiments to Professional Chocolatier
Jessica’s journey into chocolate-making began with curiosity.
She became fascinated not only by chocolate itself but also by where it comes from — the farming process, the people who grow cocoa, and how environmental factors influence flavor.
She learned that chocolate, like coffee or wine, can reflect where it is grown.
The soil, climate, fermentation process, and other environmental factors can influence the final taste of the cocoa bean.
That curiosity led Jessica to study everything she could about chocolate. She completed an online chocolatier program, took classes from pastry chefs and chocolatiers across the country, and spent years practicing her craft.
She even had the opportunity to work with Christopher Elbow Chocolates during one of their holiday productions, gaining valuable experience from professionals in the industry.
Through years of learning and experimentation, Jessica developed the skills and confidence to share her creations with customers.
A National Competition Win
Jessica’s talent reached an even bigger audience when she competed on Baking It, a holiday baking competition created by Amy Poehler and hosted by Maya Rudolph and Andy Samberg.
Competing alongside her sister, Jessica took home the grand prize — a $50,000 win.
The experience was unforgettable, from meeting talented bakers to seeing how much work goes into producing a television show.
For Jessica, the competition was also an incredible validation of her years of dedication.
As a mostly self-taught chocolatier, being able to put her creations in front of judges and receive recognition was a meaningful milestone.
